Xanthan Gum Overview
Xanthan gum is an extracellular polysaccharide produced through microbial fermentation. It is cold-water soluble and widely applicable. It has a synergistic effect when combined with locust bean gum or guar gum:
- Xanthan:Locust Bean Gum = 1:1 → Optimal gel strength, pH-dependent.
- Xanthan:Guar Gum = 20:80 → Enhanced viscosity and stability.
